BARBECUED CHICKEN

Ingredients

  • ¼ cup canola oil
  • 4 -5 boneless, skinless chicken breasts
  • ½ cup chopped onion
  • ½ cup ketchup
  • 1/3 cup water
  • 2 tablespoons lemon juice
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon white vinegar
  • 1 tablespoon yellow mustard

Directions

Preheat over to 325 degrees.

Heat oil in skillet. Add onion and cook until tender. While onion is cooking, pour ½ cup ketchup into 2 cup mixing cup. Add water, lemon juice, Worcestershire sauce, white vinegar, and yellow mustard. Stir to combine ingredients. Add to skillet and simmer on low heat while preparing chicken.

Cut chicken breasts into smaller pieces, about 2 x 2 inches. Place in 8 x 12 inch baking dish. Pour sauce over chicken. Bake, uncovered for 1 hour, 15 minutes. Turn chicken over at least once during baking.

NOTE: This sauce is easily doubled if needed for more chicken.

Chicken can also be grilled. Prepare sauce and chicken as above. Place chicken on grill and baste often with sauce until chicken is done.
